I haven’t made cookies in about a million years! Which was way too long. Mmmmmmmm
As I mentioned, I promised my friend Ben some cookies for his help making my website all pretty, so I set out to make some today after class. Obviously, I made healthy (but still tasty!) cookies, fANNEtastic food style
Oatmeal Dark Chocolate Cookies
(makes 2 dozen)
Ingredients
Dry:
- 2 & 1/4 C rolled oats
- 1/2 C whole wheat pastry flour
- 1/2 C brown sugar
- 1/4 C ground flaxseed
- 1/2 Tbsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
Wet:
- 1/2 C skim milk (or dairy substitute)
- 1/2 C unsweetened applesauce
- 1/2 C dark chocolate chips (or raisins, cranberries, etc.)
- 2 eggs
- 1 tsp vanilla extract
Instructions
Preheat oven to 350. In two separate bowls, add wet and dry ingredients, then add wet to dry and mix until more or less uniform.
Spoon cookie batter onto two nonstick or greased (I used PAM spray) cookie sheets — this recipe makes about 24 small-ish cookies.
Pop them in the oven and bake about 12 minutes.
Mmmm they came out so tasty! I sampled one two immediately, you know, to make sure they weren’t poisonous or anything
I mean, someone had to take one for the team.
They are slightly crispy on the outside but soft and chewy on the inside, which I love, and they aren’t too sweet. But the chocolate adds some decadence to them
I would love these with raisins. Oatmeal raisin cookies are my absolute favorite.
