Entrees:

Balsamic Chicken with Mushrooms and Tomatoes

(based on this recipe, except I used mushrooms instead of spinach (wanted to do them separately) and nixed the couscous. To simplify the recipe, I cooked the chicken first in a large, deep pan with the olive oil and garlic and then threw all the rest of the ingredients in with it for a few extra minutes!)

We had such a fun day! We had brunch in Georgetown at one of my favorite places in the city, Peacock Cafe, and then spent the rest of the afternoon walking around and doing a little shopping ;)

Now it’s time to relax! We have a big day planned tomorrow involving running, more brunch, and some art museum action. And then a hot Valentine’s Day dinner, obviously ;)

      Yes!!!! I already knew she liked sauteed spinach and sweet potatoes, but the beets were a new thing for her and she actually liked them! The only no go was the mushrooms ;) xoxo -A

      Mmmm….Peacock Cafe! My best friend lives in DC and while she was in GTown we ate there every time I visited. Thanks for reminding me of fun times with friends in DC!
