Mmmm… I made one of my favorite lunches today! It had been WAY too long.

A healthier, more awesome twist on the usual smoked salmon/cream cheese combination :)

Smoked Salmon & Dill Wrap

Ingredients:

  • 1 serving smoked salmon
  • 1 light Laughing Cow Swiss cheese wedge
  • 1 whole grain wrap (I used an Ezekiel sprouted grain wrap)
  • Fresh spinach leaves
  • Dried dill

Just spread the cheese onto the wrap and sprinkle on some dried dill (this is the key ingredient!):

Then top with the smoked salmon:

And finally with a big handful of fresh spinach!

Delicious! I LOVE smoked salmon. Yes, it’s a bit high in sodium… but sometimes you just gotta live a little ;)

These would also be delicious as a party appetizer – just make a bunch of the wraps, roll them all up and cut them into bite sizes pieces held in place with toothpicks!

With my wrap, I enjoyed a massive salad with mixed greens, cucumber, red and green pepper, avocado, feta cheese, and balsamic vinaigrette:

And an unpictured orange! I also had some of my favorite tea with milk :)

Now I’m off to class. Don’t worry, I’m armed with one of my homemade granola bars:

      I was seriously imaging a salmon wrap this week. I think my visions came from the havariti cheese with dill and the salmon burgers we just picked up. Regardless, I’ve been dying to create this and then, here you are reading my mind! :)

      And those granola bars girl….you need to package and sell these they look that good! :)

      I love smoked salmon with a passion. I was in German last year for 3 months with my husband for work and stayed at this hotel. Anyway, every day I went to the breakfast buffet and they alway had salmon. That was one item I would eat every morning for brunch.

      After drooling over the salmon (!) I was intrigued by the homemade granola bars. I’ve turned to Kind bars with nuts and dried fruit and Dancing Star spirulina chunks of energy for my go to sweet snack. It can get pricey to buy these so I’d like to make my own granola bars – have you posted your recipe or do you have a link to any?

      Love your sight – I always get a kick out of reading it and learn something new every time I visit.
