A New 5 Minute Lunch + Philly Meet Up!

Good morning!

I made another awesome 5-minute lunch this morning to take to work! If you’re a new reader, check out my other posts in my 5-minute packable lunch series:

Today’s creation was a hummus, tabouleh, tomato, and mixed greens pita!

Yummmmmm. The key to packing awesome sandwiches is to toast your bread! This will help the sandwich from getting soggy before you eat it. No one likes soggy sandwiches.

Starting with my toasted pita, I simply spread on some hummus…

Topped with a few large spoonfuls of store-bought tabouleh (must try to create my own homemade version of this soon!):

And then topped with the star — a few slices of this DELICIOUS tomato from the Eastern Market farmers market I went to with the girls on Saturday.

I think tomatoes are the #1 example of food that tastes WAY better when it’s fresh and local (and in season!):

And, finally, I threw on a big handful of mixed greens:

For my sides, I grabbed a couple clementines:

And some leftover green beans from my delicious dinner on Sunday night with Jessica.

I love green beans and eat them like french fries, with my hands ;)

For my afternoon snack, I grabbed a beat up (but hopefully tasty) pear and a plain nonfat Greek yogurt. I LOVEEEE pear and plain yogurt together. Try it!

I’m off to work! I’m feeling good because I did some yoga this morning for the first time in way too long. My entire body was SO stiff and tight from all the running and kickboxing I’ve been doing, and it felt amazing! (Check out my post on how I went from hating yoga to loving it!) I’ve also been continuing to ice and foam roll my calf, and it’s feeling better every day. T-minus 4 days until my very first half marathon!

Tina, Jenna, Sabrina, and I are planning a meet up for Philly readers and bloggers at Phileo Yogurt in the city at 3:00 pm on Friday. I think you guys know how I feel about fro-yo by this point ;) We know most of you will be stuck at work on Friday, but we’re hoping you can sneak out for an afternoon fro-yo, walking, and chatting break with the four of us!     Are those tomatoes actually local? I ask because its not really tomato season (you don’t usually see them at farmer’s markets until late July). Although I guess they could be greenhouse grown. I’m just jealous because I loooove fresh, local tomatoes!

      Well, I assume they were since they were at the farmers market! Maybe not? All I know is they are like 1000x more delicious and flavorful than the grocery store ones at this time of year! They’re seriously like the ones we get in Cape May in the summer!

    Ooooh sooo many veggies my dear Anne. Your lunches look delicious but my tastebuds would rebel. I wish I could pack mine in 5 minutes. Maybe I’m just slow. I take a good 20 minutes!

    The key to a good packed sandwich IS TOTALLY toasting your bread! I toast all my sandwiches because there is nothing I hate more than a soggy sandwich. You are so good with this lunch thing :)

    That tomato looks incredible. I am now daydreaming of all of the tomatoes I used to eat every summer when I visited my family in Illinois…we would just pull them right from their garden, slice them up and eat them as a side dish at every dinner and lunch…oh, man. I think I passed out for a second there.

    Another way to keep your bread from getting soggy (if you don’t want to toast it) is to create a “barrier” between the fillings and the bread. I’ve been making chickpea salad sandwiches all week and putting (patted dry) spinach between the bread and fillings and they last until lunch. I do this because I live in the 1800s and don’t have a toaster, and am too lazy to fire up the oven every morning while making my lunch. ;)
