Friends — thank you all for the amazing comments on my last post. It means a lot to me
Hello from the road! No rest for the weary — Matt and I are currently on our way to upstate New York for a wedding! We flew from Raleigh to Newark this morning, then flew on to Rochester where we met up with friends, rented a car, and are now driving the couple hours to the finger lakes. Matt’s high school friend is marrying my college friend, so it’s going to be a huge party of all my college buddies and all our joint DC friends. We’re staying in a big house — I’m excited! But I wish it weren’t this weekend… so exhausted and our new place is still a disaster. Bah.
I promise I’ll show more pictures once it’s all cute and set up!
All went well with the move. As you guys probably gathered, Matt moved with me He works in consulting and travels a lot for work anyway, so he’ll be continuing to work up in DC Mon-Thurs and down in NC with me the rest of the time. Perfect solution! Here he is being manly and putting together a cabinet
Also, a big thank you to the amazing Caitlin and her fiancÃ© for helping us lug all our crap inside on Tuesday! It’s amazing that someone I only know via Twitter was nice enough to offer help. It was such a life saver, especially for the huge heavy bedroom furniture!
Caitlin — I promise next time we hang out it won’t involve lugging furniture and heavy boxes in 100 degree heat
Matt and I spent Wednesday frantically unpacking and making Target runs, and then yesterday I headed off to campus for my first of two orientations!
Pretty campus I feel like UNC is a ginormous version of Dickinson, where I did my undergrad (heart!).
After getting super lost and missing the lunch part of orientation, I finally got my act together and attended two sessions on health insurance and “grad student life.” Good times!
And then I got my official UNC student ID card! Woohoo! The photo actually came out cute, too! That NEVER happens
And then, last night, Matt and I made our first meal in our new kitchen Love this plate (it’s Matt’s)!
There’s a small farmers market right by our apartment, so we picked up some fun local produce for the dinner!
That’s actually “thai basil” instead of regular basil! It has such a delicious flavor. Yum!
Other ingredients: Quinoa pasta and a tiny box of kamut pasta that was a sample from the Healthy Living Summit:
And oregano, artichokes, olive oil, and organic tomato sauce!
We just sautÃ©ed all the chopped veggies in a pan with some garlic, thai basil, oregano, and olive oil/cooking spray:
Then added in the tomato sauce and artichoke hearts:
We also added in some local sausage, also purchased at the farmer’s market! Matt cooked it in a separate pan with some cooking spray and garlic, and when it was ready, drained the fat out and added it into the veggie/tomato sauce mix!
Serve atop pasta
Yum! The kamut pasta was especially fun because it was tiny and perfect for fitting on forks! Heh.
So far I’m a fan of the new kitchen!
