Back to School!

Hello friends!

I’m back after a busy first day of classes. It’s so fun being back on a college campus again! I can’t wait til the weather gets cooler — I always associate cool fall weather with going back to school :)

I’m so excited to finally be officially starting my masters program! There’s 27 of us in my MPH class year and I can’t wait to get to know everyone better :)

This semester, I’m taking 4 classes here at UNC Chapel Hill:

  • Bio Statistics
  • Nutrition of Children and Mothers
  • Nutritional Assessment & Counseling Skills
  • Food Science Production and Meal Preparation

I’m especially excited about the last two! The counseling class seems like we’ll be doing a lot of cool hands on stuff, including shadowing RD’s working with clients, simulating client interviews in class, etc. And the food science one will be fun because the lab = COOKING! :) The nutrition of children and mothers class will be cool too, especially since one of our assignments will be teaching a few classes on nutrition to 3rd graders at a nearby elementary school :) How fun! I miss teaching ever since I taught English at a primary school in Prague in 2008-2009.

Anyway! Today also marked the return of the packed lunch. Hooray! I heart packed lunches :)

On the menu? Tuna salad, my fave. I hadn’t had it in too many weeks :)

I followed my usual tuna salad with a healthy twist” recipe, except I added artichoke hearts instead of celery. Yum!

And for afternoon snacks, a Chobani pomegranate Greek yogurt (love) with some raw oats to mix in (they get super doughy and delish, try it!):

And a package of trail mix I tossed into my bag in case things got dire (def snacked on this some during class):

Time to throw together some dinner! Matt and I are going to see the “Scott Pilgram” movie tonight. Have any of you seen it?

    Glad you had a great 1st day! I agree about cooler weather and school starting. I kind of want to put on a hoodie sweatshirt right now. :)

    Your class schedule looks a bit like mine, although I took my nutritional assessment course this summer. It was really interesting. I’m really exited for my Food Science course as well!

    Yay for a good first day back! Mine is next week and I’m getting nervous. We saw SPVTW the other day and I actually wasn’t a fan; I just never got drawn into the characters or storyline. Let us know what you think.

    Scott Pilgrim was HYSTERICAL! I hope you guys enjoy it as much as we did.

    I start my grad program on Monday, and I can’t wait! There’s absolutely nothing like being on campus in the fall.

    Welcome to Carolina! This is my first fall in 3 years that I am not there, and I am so glad to be able to pretend I am back by reading your blog–although I do not miss biostatistics. GOOD LUCK!

    Your classes sound very, very interesting! I can’t wait to hear more about them… especially the “fieldwork” aspects.

    Yum that tuna sando looks mighty good. I’ve not had canned tuna in ages but that’s bringing back good memories :)

    I started school this week too. I was stressing about my classes, but this post made me more excited about them. If only we could be study buddies ; ) I’m taking Human Physio, Foodservice Admin, Human Nutrition, Science of Food, and Consumer Health. Good luck, dearie!

      lol, soooo excited ;) Actually the teacher is a grad student (not an 80 year old nerdy white dude like I was expecting) and it made me think of you :)

    Yea! I’m so happy to hear that you and Matt are settling in so nicely. :) It was so nice to meet you and chat at HLS while we were at Argo Tea.

    I can’t wait for fall either! Even though we don’t have much of the changing seasons here in North Florida I still love the cool temps that the fall brings. I swear there is also a “fall smell” that the air gets too!

    I got my undergrad degree in Health Admin which is in the School of Public Healthy at UNC-CH. I remember seeing the Nutrition majors eating their packed lunches and spotting hummus for the first time. I had NO idea what it was. But, that was over 10 years ago! I’m on board now.

    The class about children and women’s nutrition sounds most interesting to me. Cooking labs sound fun! I hope you’ll blog about your “lab experiments.”
