No. More. Dairy!!

Before I get to my Food Science Lab recap… I just have to share my salad from lunch yesterday. So tasty (and pretty, too)!

Since I have some leftover canned sweet potato from making my epic Sweet Potato Whole Wheat Bread Pudding, I decided to whip up a variation of my Black Bean & Pumpkin Veggie Burgers, but using sweet potato, instead! It was a success :)

I also used fresh cilantro instead of parsley, since I had some leftover cilantro from my Thai Summer Rolls adventure! Yum. I LOVE cilantro :)

I threw one of the patties on top of some romaine and spinach, and then topped it with salsa and a little salt and pepper.

The only thing missing? Some avocado and grated cheddar cheese to complete the Mexican theme! :)

Speaking of cheese, we had another fun night in Food Science Lab last night! This week’s topic: MILK and CHEESE, and studying their composition, taste and texture differences, etc.!

Mmm… LOTS of taste testing!

We tried whole milk, kefir (blech!), almond milk, rice milk, soy milk, skim milk, skim milk from powder (yuck!), buttermilk (major blech!), goat’s milk (tasted like goat cheese!), and more!

And then, we tried all sorts of cheese! Feta (we all know how I feel about feta!), smoked gouda (LOVE!!!), cheddar, havarti, cottage cheese, gorgonzola (too stinky for me), brie, and more. Mmmm :)

My team also learned how to make pudding! Yum :)

Yep, those are totally Nilla Wafers. Old school!

And there was also homemade mac and cheese. Tasty!

    I would love to cheese test all day long. Unfortunately I would be paying for it with zits and gassiness! Actually, the last symptom, my husband would be the one suffering! haha. Everything looks wonderful!

    That would honestly be a dangerous class for me to be around. I’m like a cheese monster! I could eat unlimited amounts of it – just bring on the wine. So yummy.

    oh my gosh- when i saw the post title i thought you had gone off the deep end and were swearing off dairy for life! we might not have been friends anymore ;) then i came to my senses and realized you would never give up feta or yogurt so this must mean something else ;)

    I felt like my food lab last semester was way old school, too. They need some of our blog recipes ;)

    Did you wear your Feta shirt to class?!! I bet you could’ve taken all of it, just because you had an awesome shirt….just sayin’…

    I remember this lab (during my undergrad) being the first time I tried Soymilk and I almost spit it out. If we had had Almond milk there I probably would’ve just called it a day and quit right there. Oh, how things have changed ;)

      OMG! I can’t believe I DIDN’T wear my Feta shirt to this class!!!! Total fail, haha.

      And you didn’t like soymilk at first?! I’m surprised, it’s sweet! Almost everyone liked the almond milk, too, actually – also sweet! Most of us found rice milk to watery and rice-ish though…
