I have a new breakfast love.
Oh, yes. That would be spiced cranberry compote, cottage cheese, and oatmeal, all layered together. So epic.

Combine oatmeal ingredients in a bowl, microwave on high for 3 minutes, stirring once. Set aside. In a small pan or skillet, mix all cranberry compote ingredients. Turn heat to medium and stir frequently, until desired consistency reached (a few minutes). In your original oatmeal bowl, layer cottage cheese over the cooked oatmeal, followed by the cranberry compote topping. Add a sprinkle of brown sugar, if desired. Enjoy! |

How have you put yourself first lately? I’ve been making time for workouts even though it’s finals week. No matter how busy I am, I know I’ll feel happier and less stressed if I fit in a workout — even if it’s just some time on the elliptical with my flashcards!
Tomorrow is my last final exam — biostats!! I’m heading off to meet the girls at a coffee shop to study allllll day long, but we’ve decided that once we’re finished (late this afternoon) we’re going to reward ourselves with a trail run since the coffee shop is right near one of our favorite trails! Yay 🙂
