Hellooooooooooooooooo!
First things first — you HAVE to watch this video. It pretty much made my life. So funny!
(Thanks to my girl Tina for posting it yesterday!)
And now — on to the food! I have a new 5 minute packable lunch for you all today
The star? This amazing turkey, sliced apple, gouda, avocado, and mustard sandwich:
Epic. I simply layered turkey, thinly sliced gouda cheese, avocado, and a couple thin slices of apple, and then topped it all off with some spicy dijon mustard.

I had the sandwich on a toasted Arnold sandwich thin — I love these because they are nice and small (only 100 calories)! I never want a whole huge sandwich because I would always rather have lots of fun side dishes
I get bored just eating one thing!
My first side dish was a simple mixed green, cherry tomato, and sliced yellow pepper salad:
With a little baggie of balsamic vinaigrette:
And some grapes:
Afternoon snacks were an unpictured clementine from my office, some baby carrots, and a Kashi granola bar!

Yum! That was my lunch yesterday for work and I devoured it
I’m making something similar for lunch today — I’m thinking my Smoked Salmon & Dill Wrap but using another sandwich thin instead of a wrap! Plus similar side dishes since that’s pretty much what the options in the fridge are still.
You can find all my previous 5 minute packable lunch series posts on my recipe page!

p.s. Guess what? I discovered Paradice ice packs (that I use to ice my knees after running — check out this post for more details) are also great for keeping your lunch cold when you forget to bring home a real ice pack! Hehe.
Have a wonderful day!

My hubs loves that video! Great lunch! Want to pack me one?
Sure
omg, the cat video is hilarious. I’m still rolling over here from it.
And the sandwich looks delish!
That sandwich looks delicious Yummie. Don’t like cats, but I will admit that the video is precious.
Holy YUMINESS!
This sandwich looks AMAZING!
Love the idea of apple and avocado in a sandwich! I bet that would taste great with some other veggies!
That sandwich looks A-MAZ-ING! Seriously making my stomach growl for lunch already!!
That sandwich looks deeelish!!!!!!!!! I love the sandwich thins too!!! =D
That sandwich looks sooo good! Those cats are funny, though if you like that check this out: http://eatmovewrite.com/2010/12/15/just-in-case-you-need-to-laugh-your-ass-off-today/
Had me in tears laughing.
I love apples and pears with turkey. It’s such a great combination and I bet that it’s even better with the avocado. Great play of textures. And I am also all about toasting the bread. Brings so much more texure and flavor to the table.
That sandwich looks awesome! I need to try that ASAP!
This website http://www.snacktaxi.com sells reuseable baggies (snack and sandwich size) in awesome designs. I highly recommend them. I use mine every day!
How cool! Thanks!
That is one of my fave kashi bar flavors! Tastes like the holidays!!
I’m with you! I would rather have a smaller sandwich and have a lot of tasty sides!
I’ve never thought to add apple slices to a sandwich, or to mix it with mustard. I’m game, though!
That sandwich looks so good it’s making me hungry…and I just ate dinner! haha
Love the sandwich! Can’t wait to try my own
Jen
Love the video and love the lunch. Wonderful!
