Seared Tilapia and Stuffed Portobello Mushroom Caps

Good morning!

Continuing with my quest to make all sorts of fresh, healthy meals this week after basically and entire month of eating out over the holidays/my European trip, I made a delish dinner last night!

013

My inspiration was two of my favorite recipes on my blog — both from one of my best friends, Jessica — the first is Almond Encrusted Tilapia!

I didn’t follow the recipe because I was missing a bunch of stuff, so I basically just ended up rolling the tilapia in some spelt flour mixed with a little salt and pepper, and tossing it in a pan with a little bit of olive oil. Voila!

011

Super simple and tasty, too.

Next up — a hybrid of my Stuffed Portobello Mushrooms! Veggie explosion:

009

I more or less followed the recipe, except that I used fresh tomatoes instead of sundried and I didn’t have any artichoke hearts, so I used zucchini instead. I know, I’m so wild and crazy.

006

Very satisfying. Actually, it was so filling I only made it through just about half and saved the rest for later! The tilapia was enormous and I went a bit crazy with the veggies (I used a whole bag of spinach!). Perfect because now I have leftovers :)

014

For dessert, I enjoyed a couple pieces of this awesome licorice I was sent to review for the blog!

015

Normally I wouldn’t accept an offer to review candy, but I LOVE black licorice (and black jelly beans — yes, I’m weird) and this brand is awesome because it’s licorice minus the weird fake processed ingredients (no artificial flavors or colors, no preservatives, no trans fat, no HFCS). Sweet!

My dad also absolutely loves black licorice, so Natural Vines was nice enough to send a bag of black licorice for him to try, too. I brought it over to Germany for our family vacation and he gave them two big thumbs up :)

It also comes in strawberry:

Any other black licorice or black jelly bean lovers out there?

In other news… I finally decided on a business card! The front of the business card will be the one with the purple line through it I posted a picture of in this post. And here’s the back I decided on:

Thoughts? A lot of you didn’t like “awesomeness,” so I went with fun instead — shorter, less silly sounding, but still conveys the same idea (i.e. that my blog is supposed to be useful AND entertaining — and that it’s about my life and not just food!). I hope you guys like it as much as I do! And thanks again to Bailey, graphic designer extraordinaire —whether you need general graphic design work, a new blog banner or logo, business cards, etc., I’d highly recommend her.

Some fun things I’ve come across recently:

  • This awesome ad campaign that markets baby carrots like junk food is marketed. Genius, right?! They should do this with all healthy food!
  • The “Pound for Pound Challenge” — for every pound you pledge to lose, they will donate 11¢ to Feeding America – enough to secure one pound of groceries on behalf of local food banks. (You can also pledge to maintain your weight!)
  • This blog (written by a friend of my friend Ben)the author is running 40 miles on his 40th birthday to promote awareness of severe food allergies like the ones his son suffers from. Very admirable! (To read about the original inspiration for the project, check out this post.)

Off to school I go — have a great day!

The baby carrots ad is so cool! The marketing director behind that is my hero! :)
And food/business card both look fannnnntastic! :)

  2. 2

Graphic designers are so talented. Simple, readable, catchy, love it!

Your supper last night looks simply delicious. Not a fish eater, but I find tilapia very palatable. I love jelly beans especially black ones, but being a diabetic, I can’t eat them. Boo.(I miss all the good stuff). As far as the back of your business cards go, I liked “awesomeness”, but “fun” is good too.

P.S. I am going to leave my home to go to the grocery store today. It will be the first time since Sunday. Still ice on the roads, I will take our jeep. I think I can make it.

Love the card and love tilapia! Would have enjoyed that dinner. Well done!

I think the cards look great- love the colors!

Love the card! Love the colors.

  7. 7

mmmm that tilapia looks so bomb!!

  8. 8

I love the cards! Looks GREAT!!!

That baby carrots campaign is genius!

As a fellow freak of nature, I am going to need to try the Natural Vines line. Do you like most things with anise flavor? Fennel? Pastis? Sambuca? I need to temper my intake of the latter two but I just love the flavor. It’s like cilantro though- you either love it or you hate it.

  10. 11

I think the card looks great!

And the crust on the tilapia looks pretty delish as well!…hard to believe that fish at 10:30 in the morning could look so good ;)

  11. 12

I’m loving the design of your card! And..that tilapia looks pretty incredible too. :)

  12. 13

i love your business card design! and i like that you chose fewer words – it’s less busy and more to the point. nice job!

  13. 14

That’s such a good idea! Duhh why didn’t I think of stuffing portobellas with spinach;)

Slash that is the cutest business card I have ever seen, good work!

  14. 15

    I love licorice flavored anything!

My favorite is watching a movie with a box of black vines (movie theaters don’t really carry the black ones anymore, though), and a soda, and ditch the straw. Bite of the ends of the vine, use it as a straw for a while, until it gets mushy, gnaw on it, then make another straw.

  15. 17

That meal looks awesome! I’m definitely going to try it out! Oh and by the way, I love the word “Awesomeness” … probably, though, because it reminds me of Barney Stinson :)

  16. 18

I *love* the new business cards- great colors and fabulous wording/message. I also love that the T-shirt shop website is on there too!

  17. 19

I ADORE Black Licorice AND black Jelly Beans! I’ve heard somewhere that Licorice has some health benefits…don’t know that you could get them all by eating just the candy, but still…good excuse, right?? =)

  18. 20

That fish looks delicious. If I have really good, fresh fish I actually prefer it just as you’ve done, very simple and tasty.

  19. 21

I am SO glad to have found another black licorice lover in the world!!! People think it’s disgusting that I cherry pick the black jelly beans and that Good n’ Plenties are one of my favorite candies. Mmmm my mouth is watering just at the thought of it! I wanna try that licorice now.

    Lauren Setzer says:

    Love your card!! :)

  21. 23

What a lovely dinner! I just had tilapia a couple of days ago, a soy glazed version. I also love that improvised stuff mushroom dish!

I love the finished business cards! But…not a fan of black licorice haha.

  22. 24

The card is so professional and fun! I love it!

  23. 25

Just looking at the pictures made my mouth water. I would really love to have a taste of that tilapia.
