Matt’s Oatmeal Dark Chocolate Chunk Cookies

The wait is over… today I am back to share the recipe for the Oatmeal Dark Chocolate Chunk Cookies Matt made over the weekend to nurse me back to health. :)

They were absolutely delicious — healthy but not TOO healthy, if you know what I mean :) He found a standard cookie recipe online, then healthified them using one of my cookie recipes as a comparison — he used whole wheat pastry flour instead of regular flour, added more oats, subbed half the butter for applesauce, etc. I’m so proud!

Matt’s Oatmeal Dark Chocolate Chunk Cookies

(makes about 2 dozen cookies)

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup applesauce
  • 3/4 cup packed light brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • Dash or 3 of cinnamon
  • 1 & 1/4 cups whole wheat pastry flour (not regular WW flour)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups oats
  • 1 cup dark chocolate pieces

Directions

  1. Preheat oven to 325 degrees.
  2. In a large bowl, cream together the butter, applesauce, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the oats and dark chocolate pieces. Drop by heaping spoonfuls onto cooking sprayed or nonstick baking sheets.
  3. Bake 15 minutes; allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy :)

We had a bunch of Dove dark chocolates left over from Valentine’s Day (my sweet friend Lauren brought me a cute wine glass full of them with a little valentine), so Matt got creative and chopped some of them into chunks to use in the cookies since we didn’t have any chocolate chips!

Make these ASAP. Your family and friends won’t even know they’ve been healthified ;)

I just got home from class and am now all settled in sweatpants and a sweatshirt, ready to work on a take home exam for my Epidemiology class. No speed workout this morning — we decided it would be best to take a week off given my recent sickness, but I did get in a hilly 3 miler in my neighborhood this a.m. It felt good to get back out there!

What’s your favorite type of cookie? Mine is oatmeal anything… I just love the texture and taste :)

p.s. If you entered my Attune Foods giveaway — make sure you checked to see if you were one of the winners (announced at the end of this post)! There’s still a couple people that haven’t claimed their prizes :)

I think the key to these cookies turning out well (and possibly your recovery) was the genius move to use the chopped chocolate over chocolate chips. Chocolate chips have a lower cocoa butter content so that the chips retain their shape during baking. The extra cocoa butter in chocolate chunks (or chopped chocolate hearts, same thing) makes cookies taste much better, in my opinion.

And cocoa butter is key to illness recovery. Honestly.

Way to go Matt, very impressive baking skills :)

My favorite type of cookie has to be just plain old chocolate chip!

Wow! Totally impressed by Matt’s baking skills. Healthifying and using dove chocolates…so creative!

My favorite cookies to make in highschool were oatmeal chocolate chip that I sprinkled cinnamon on. Need to make those again!

I loved this post! Your pictures are so pretty & look great! I love that you healthified these but in a way that people wont even notice! I love baking treats for my friends and family and always try to make them as healthy as possible! I think sometimes they cringe at the things I bring over! Hehe..these will probably be a big hit though! :)

Yum. I would love to be nursed back to health by chocolate. I also love oatmeal cookies, but not raisins so the inclusion of chocolate sounds MUCH better.

  7. 9

Look at that baker! Those cookies sound fabulous!

  8. 10

I love oatmeal scotchies! Just use butterscotch chips – you won’t go back…

  9. 12

I will definitely try those beauties. I absolutely love Dove Dark Chocolate.
So glad you are almost up to par, stomach virus are awful.

  10. 13

Matt is amazing!!! :) So are these cookies. ;)

Ha, HOW CUTE. I love that he did a little research and created something in the middle :) I’m an advocate for a little bit o’ buttah in cookies..they just aren’t the same without it!

  12. 15

Amen to the “oatmeal anything” cookie preference! Oatmeal raisin. Oatmeal chocolate chunk. Plain ol’ oatmeal. It pretty much belongs in cookie form. :D

These cookies look wonderful! I can’t wait to try them. :D
