Well, friends, sadly our Puerto Rican spring break adventure has come to an end. But Matt and I had an amazing last day What started out as a rainy and gloomy morning turned into a beautiful afternoon!
Matt and I started our day with a leisurely breakfast while watching the rain pour down.
I wasn’t sure what the breakfast situation would be all week, and when I travel I usually try to keep breakfast and snacks healthy, so I came prepared.
And for breakfasts, just in case, I packed a bag of raw oats, some instant oatmeal packets, and some 90 calorie almond butter packets — both Justin’s (their maple almond butter is AMAZING) and Barney Butter.
I find the instant oatmeal is too sweet on its own (and not filling enough), so I like adding raw plain oats to it to bulk it up and de-sweeten it a bit And doesn’t everyone travel with almond butter?
Turns out our hotel had an awesome free breakfast on their rooftop (gorgeous views) since Matt is an “elite” member with them due to all his travel! But I still used some of my provisions to make it more fun I started with a small cup of their oats/cream of wheat/unclear what it was, with a little dollop of plain yogurt and cottage cheese:
Then I topped it with a big pile of my raw oats, a sliced banana, and some almond butter!
Plus a small plate of fruit — they had some really good stuff! And a little bit of scrambled eggs, too:
That was pretty much my breakfast every day, give or take the eggs depending how hungry I was Plus some skim milk and some water!
After breakfast yesterday, Matt and I decided to wait out the rain in the hotel gym. By the time we emerged sweaty and rejuvenated an hour later, it was brilliant and sunny outside! Score.
For those of you that asked — we stayed at the Marriott resort in Condado. I highly recommend it if you ever come to San Juan — it was gorgeous and the staff were all very nice, too.
After a quick lunch — we headed to the beach for the rest of the day
Matt had to stay a bit bundled up due to his sunburn, haha. I’m happy to report neither of us got sunburned again yesterday
We spent most of the time playing in the water — I’m obsessed with the ocean and the waves. I could spend hours just jumping over them! The water was the perfect temperature, too.
Around 5 p.m. I sadly said goodbye to the water and Matt and I got ready for dinner. I wish my hair weren’t soaking wet and blowing awkwardly in the breeze in this photo!
Oh, well Fun fact — I don’t own a blow dryer. My hair is wavy and very thick and I used to dry my hair every day in high school and college, but then I discovered the amazingness that is layers. Now I’m scrunch and go, all the way!
We watched the sun set on the beach — just gorgeous.
There’s nothing more beautiful than watching the sun set on a beach. Am I right?
And then we headed off to dinner! We went to a fun place called Puerto Peru. We actually went there the night before, too, and loved it — they have outdoor seating, live bands roaming around, and super friendly servers.
We started with an order of the fish and shrimp ceviche — SO good!
And it came with steamed sweet potato on the side — awesome?!
Plus an order of the plantains — I love me some plantains. They are EVERYWHERE in Puerto Rico!
They were actually really good dipped into the ceviche!
We knew from the night before that the main courses were huge, so we shared the Chicken Chaufa — which is basically fried rice
And for dessert, we shared this custardy thing I can’t remember the name of. It was good
And thus, our last day in paradise came to a close. It’s been a wonderful week and I feel so lucky that I was able to have such a nice break! I’ll leave you with this photo of the beach at dusk — next time any of us feel stressed, we can just mentally transport ourselves here
I’m actually spending the rest of the weekend in D.C. — my dad is in town for work! We didn’t find out he’d be around until a couple weeks ago, but randomly Matt and I had a layover in D.C. on our way back from Puerto Rico, so we just got off there instead of continuing to Raleigh! Fate, clearly. I’m going out to dinner with my extended family tonight and then tomorrow morning is my 12 mile training run — my last long one before the half marathon in two weeks! My dad is going to run half of it with me and then cheer me on for the rest I fly back to Raleigh late tomorrow night and it’s back to the grind on Monday!
