Getting Back on Track

After a week full of travel (Thermador in Arizona and the wedding this past weekend), I was really craving some healthy food and exercise! It’s crazy how my energy levels just plummet when I’m not eating as healthfully.

Matt and I got back just in time for dinner on Sunday night; I told him I was in the mood for something healthy and he suggested stir fry — with tofu, no less! My jaw about dropped.

I love that he likes cooking and isn’t scared to try cooking new things. Dinner was delicious! He added some grated fresh ginger to the sauce and it really amped up the flavor. Veggie-tastic, too!

What’s your favorite way to cook tofu? Remember my super easy 4 ingredient Almond Soy Sauce Baked Tofu recipe? I need to make that again sometime soon!

Monday morning featured a sweaty gym session followed by a healthy breakfast. I really love going out to dinner, but not so much breakfast. When I travel I always miss my breakfast cereal and berries :)

For some reason I always mix two cereals — I get bored just having one, hehe. My latest obsession is mixing this flax, corn, quinoa & amaranth Mesa Sunrise cereal from the co-op with Erewhon’s raisin bran. Yum!

Somehow the raisins in the Erewhon cereal stay soft and plump :)

I’m off to my internship — it will be a very long day today because we’re starting at 9:30 a.m. and not ending until 9 p.m.! We have an event tonight called “From Garden to Pantry” — it should be fun!

Bailey made it for me :) She’s working on a new blog header for me right now, too! I’m SUPER excited — I love my current header, but I want one that matches my business cards (pictures of my cards can be found in the bottom of this post) so everything is more streamlined. I can’t wait to share header options with you guys — stay tuned!

    I totally hear you about missing exercise and healthy foods while traveling, but I admire you for living in the moment and enjoying yourself during your various trips. I sometimes struggle with feeling a little bit *too* attached to my routines and typical eats. It’s all about balance, and I love reading about how you maintain yours!

      Thanks, Gavi! My strategy is to try to keep up with exercise (I got in some good runs in Arizona and this past weekend at the wedding, and I’m usually walking/pretty active when traveling so that helps), but not to stress if I can’t. I try to keep breakfast and snacks healthy and indulge most at dinner. Balance is key :)

    I love coming back to an eating and exercise routine after going out of town. It’s crazy how one or two days can get you off track. Berries for breakfast are the best!

    I had such an indulgent weekend, I definitely need to get back on track. More importantly, I WANT to get back on track…my body is craving healthy food!

    I have only cooked tofu twice and wasn’t in love with the results but always like it when I order it from restaurants. I must try again and learn how to cook it at home properly!

      Unfortunately the reason restaurant tofu is delicious is because it’s usually deep fried! When cooking it at home, using extra firm, well pressed/drained tofu, marinating it, and then baking it will probably be your best bet :)

    It’s so great that Matt will cook and enjoy a tofu stir fry! It’s taken YEARS for me to get my husband to eat tofu…and he’ll eat it now, but he always comments that he “wishes it was steak”. haha! can’t win them all. :)

    I know what you mean about missing healthy foods. When I went to Kansas City in April for the birth of my grandson I really missed getting in all the fruits and veggies. I was eating hospital food except for breakfast and my the only food my daughter had in the house was Yoplait flavored yogurts and fresh oranges. I got down with the oranges for sure. Enjoy your event tonight. It sounds interesting.

    The stir fry looks delicious! My absolute favorite way to cook tofu is to crisp it up in the oven (as I describe here http://veggiesforreal.blogspot.com/2011/03/crispy-tofu-asian-salad.html). The result is almost identical to fried tofu (crispy on the outside, soft on the inside) but with a fraction of the oil. Once it’s all crispy you can throw it almost anything — curry, stir fry, salad, etc — , eat it plain, or with your favorite dipping sauce.

    I always mix cereals too. Grapenuts gets added to every cereal bowl no matter what else is in there. I have no idea why I do it, just need variety I guess!

    I am always so impressed with Matt’s cooking style.

    I always miss my cereal bowls when I am traveling. No one can come close to recreating the perfect bowl of cereal like you can at home. :)

    I am in love with scrambled tofu. I add onions, garlic, cilantro, and curry to it as well. GREAT on seeded grain bread!

    There is nothing like your first ‘healthy’ meal and good workout when you come home from a weekend away. It reminds me of how amazing it feels to be a health nut!

    Confression: I have never cooked with tofu. It’s actually on my goal list for the summer!

    I’m not sure what I love more – a delicious tofu dish or a man in the kitchen! Looks yummy :)

    I usually roast tofu in the oven, did he do it on the stove?
