Yes, I’m serious. These only require 2 ingredients. And they’re vegan. And very delicious.
This post is for those of you that are like me and just don’t have the desire (or the time) to spend all day in the kitchen making real pie.
The key to this recipe is using canned pumpkin pie mix vs. regular canned pumpkin. The pumpkin pie mix has spices and some sugar added, so they already did the work for you!

If you’re feeling less lazy than I was (or can’t find the canned pumpkin pie mix), you can make your own by mixing regular canned pumpkin with cinnamon, cloves, nutmeg, and some sugar to taste.
Also, if you want to keep the recipe vegan, make sure the mini fillo shells are vegan! The ones pictured above are organic, vegan, and without any hydrogenated oils or gross additives. Win!
These pumpkin pie bites would be perfect for a quick and easy last minute Thanksgiving dessert. Just like the real thing, but cuter and minus the effort.
2 Ingredient Vegan Pumpkin Pie Bites
This recipe could not be easier — or more delicious. Just like pumpkin pie, but bite sized and without the hassle! Serve warm or chilled. If you’re not worried about keeping the recipe vegan, I recommend serving them with a dollop of homemade whipped cream and a sprinkle of cinnamon on top.
- 1 package of mini filo shells
- 1 can of pumpkin pie mix (NOT regular pumpkin puree)
Preheat oven to 350.
1) Using a small spoon, place dollops of the pumpkin pie mix into the mini fillo shells until they are filled just over the top.
2) Place filled shells onto a greased or PAM sprayed baking sheet. Pop in the oven for 25 minutes.
Enjoy! And let them cool before you try them — I definitely burned my tongue!
If you want the pumpkin to harden up more like a normal pie, chill them briefly before serving, and don’t forget the whipped cream and a sprinkle of cinnamon, if desired! I wish I’d had some on hand!
