Edamame Bruschetta Recipe (and Wasa Giveaway!)

Good morning, friends! I have a feeling that you guys are feeling like me right now – ready for some simple, healthy eats after all the holiday indulgence! Well, I’ve got you covered – introducing Edamame Bruschetta! Easy to make, simple, delicious, and protein packed, too. The perfect snack. :)

My friends at Wasa recently reached out to me about creating a recipe that would go well with their line of crispbread crackers. Funnily enough, I actually ate Wasa crackers a lot when I was teaching English in Prague! Considering I couldn’t read the ingredient labels on any of the other cracker-like items at the store, it seemed like a safe bet. I love that they’re super crunchy and only have a few, pronounceable ingredients, too.

Wasa sent me a gift card (to purchase ingredients) and four boxes of different crispbread varieties (they have a ton: Whole Grain, Multi Grain, Light Rye, Hearty Rye, Sourdough Rye, Fiber Rye, and Sesame) to use for my creation. For this recipe, I decided to rock the classic multi grain. :)

I was in the mood for a healthy and protein-packed snack, so I decided to try my hand at a fun bruschetta using edamame (soy beans), which we randomly have mass quantities of in the freezer right now. I think Matt and I both keep buying it, thinking we’re out… and now we have a fridge full of frozen edamame. I’m okay with that, especially when it makes things as delicious as this bruschetta!

Edamame Bruschetta

Makes about 4 snack sized servings

This simple bruschetta makes a great healthy and protein-packed snack or party appetizer.

Ingredients:

  • 1 C shelled edamame (if frozen, let it defrost first)
  • 4 fresh basil leaves
  • 2 Tsbp. grated parmesan
  • 1 Tbsp. water
  • 1 Tbsp extra virgin olive oil
  • 1 clove garlic
  • 1 tsp. lemon juice

Instructions:

Place all ingredients in a food processor and whirl away! Once the ingredients are processed somewhat evenly, your bruschetta is ready to go. Serve atop Wasa crispbread for crunchy deliciousness and enjoy!

Easy enough, right? Give it a try! This would be a fun snack during the workday, too – just pack the bruschetta mixture and the crispbread in separate ziplock bags, then assemble when you’re ready to eat! That way nothing gets soggy.

    I’m intrigued by the idea of making an almond-honey-low fat ricotta spread for these — would have to tinker with the proportions, though, since I’m not usually a sweets maker. Maybe with some cinnamon?

    Oh Gosh…When I was in Prague I lived on those really thin pretzel sticks….offen dipped in peanut butter or nutella.

    I love Wasa with a vinegar/lemon based tuna salad or egg salad. That crunchiness is perfect!

    First I want to say that I like your blogposts very much. Made the brusselsprouts in the oven that you blogged about before. Had no idea they would taste better if one cut off all of the stems! Now I know! Thank you! ;)
    I hardly ever eat normal soft bread, get bloated by white flour, but Knäckebröd works well! My favorite is Falu Rågrut, which I don’t know whether they have translated into english or not…am too lazy to get into their site right now. My 7 year old son likes Delikatess knäcke the most. Then there is a sourdough bread in a big round package, which I am not sure Wasa makes or not, but anyway…that one with Hummus on is perfect! Last time I made it with cumin, and then heated the seeds a bit in the frying pan an then pestled them. Was good! ;) Some people here (in Sweden) also break down the bread in small pieces in their yoghurt! Thank you for a nice and ispiring blog. Looking forward to more posts in the future! :)

    First of all I want to thank you for a nice and inspiring blog! :) I didn’t know that one should cut of as much as possible of the brusselsprouts end, in order for them not to taste bitter, now I know! Made them in the oven! ;)

    My favorite Wasa knäckebröd is Falu rågrut…don’t know whether it is translated into english or not…am too lazy to get into their site right now…lol. My 7 year old sons favorite is Delikatess knäckebröd.Then there is another sourdough bread in a big round package that is very good. That one with Hummous on is perfect! Last time I made it I put some carefylly toasted and pestled cumin inside, and it was even better. Yep, I live in Sweden, grew up with knäckebröd! I get bloated by normal white bread, but knäcke is okay! ;)
