Good morning, my friends!
You know what I love? When I make something completely random for dinner to use up leftovers and it ends up being delicious.
We had a bunch of leftover cooked quinoa sitting in the fridge, veggies, and a packet of these Trader Joe’s pre-cooked lentils.
That’s a recycled photo because I forgot to get one this time, but I love those things. So easy and tasty.
Unfortunately I don’t have a recipe for this creation because I was cooking the way I normally do – throw things into the pot and see what happens. I ended up throwing the quinoa and the lentils in a pot, adding a splash of lemon olive oil, adding in a couple cups of water, and throwing in a vegetable bouillon cube for flavor.
I also threw a big handful of baby spinach on top and put the lid on so it all steamed.
Once it was all warm and the spinach was mostly wilted, I threw in some chopped tomato and green pepper and let it cook for a few more minutes. Et voila! Dinner is served.
Give it a try and get creative! Matt liked this a lot, too, which was a good sign considering it was a vegan dinner and he’s Mr. Meat!
Speaking of meat, I’ve been craving it a lot more lately with all the long runs I’ve been doing for marathon training. On Sunday night after the Parks Half Marathon I told Matt I was craving a burger, and he was happy to oblige. Check out this beast:
Matt piled our burgers high with bacon, avocado, tomato, sautéed onions, and baby spinach. Plus whole wheat buns. SO good. It’s all about moderation, right friends? I love lentils and quinoa, but sometimes I’m just in the mood for a burger!
I love that he held the burger together with our wooden chopsticks! Genius. On the side, we enjoyed some delicious summer corn. I’ll be sad to say goodbye to summer corn soon.
In other news, I’m off to give a corporate wellness presentation downtown this morning! I’ve been contracting through a group of dietitians, C&J Nutrition, that I met recently at an event to give some presentations to their corporate clients in the DC area. I did one for them last month on quick and easy dinners, and today’s presentation is on stress and healthy snacking. The presentations are a lot of fun and a nice way to mix things up from my AnneTheRD one-on-one counseling! For today’s presentation, I’ll be ending with a demo for how to make healthy and easy Oatmeal Cookie Energy Bites that the C&J ladies developed the recipe for. They’re really good and remind me of a few similar recipes I’ve made in the past: Chocolate Coconut Almond Balls, Cinnamon Raisin Almond Balls (vegan) & Peanut Cinnamon Date Balls (vegan). Homemade snack bites make such a great snack or quick portable breakfast!

I will end this completely random post with a quick and easy breakfast idea. Remember how Matt and I made a big egg & veggie (sausage optional) scramble last weekend? Well, we had a bunch of leftovers, so we threw the leftovers into Ezekiel wraps the next morning for a quick breakfast, topped with a little hot sauce.
We wrapped them up in foil so we could take them on the road! Plus a side of blueberries.
Easy and tasty. Next time we make a scramble I’ll make sure we have leftovers so we can do this again!
