Recent Eats & Shake Out Run

Only 1.5 days now stand between me and my first full marathon in Richmond! Eek! I’m so ready for it to be here already. This morning, I headed out for a 2 mile shake out run. Tomorrow will be a rest day, and then Saturday, it’s go time!

It was weird to “just” run 2 miles – and also to run by myself! I can’t even remember the last time I did a run by myself… it’s been at least 6 months, I think! What can I say – I’m a social runner. (And very lucky to have a lot of running buddies!)

It’s been a pretty busy week with work – I can’t believe it’s already Thursday! Yesterday, I did my first “pantry cleanout” session with an in person AnneTheRD client. Fun! Similar to my grocery store tours with clients, we talked a lot about label reading and going for whole/less processed versions of staple foods.

On the eating highlight front, I had the most epic nachos of my life last night at Tryst in Adams Morgan with Gena, following a yoga date. (Yes, I had nachos for dinner. Sometimes you need to live a little, friends.) As for breakfast, I brought my gluten free Spiced Pumpkin Pancake back out to play this week.

There were more blueberries under it, in case you’re wondering why I only added a few blueberries to the mix… :) It was as tasty as I remembered!

As for lunch, I’ve been having a lot of big veggie and bean salads, which is my standard go to (and was when I used to pack my lunch every day, too – they’re so easy – see my recipe page for more packed lunch ideas).

This week’s variation included mixed greens, green pepper, cucumber, mushrooms, carrot, avocado, feta cheese, chickpeas, and some fresh chopped parsley from our apartment herb boxes. Parsley is apparently the most resilient herb ever. It refuses to die, even though everything else has by now due to the cold temps. I’ll take it!

I topped it with a quick homemade dressing – just drizzled some olive oil, balsamic, dijon mustard, and lemon juice in a bowl, whisked, et voila! Awesome dressing. Plus a little salt and pepper.

On the side, I had an unpictured orange!

And now, I have to race out the door to meet a client. I hope you all have a wonderful day, my friends! I’ll be back tomorrow to check in before leaving for Richmond!

    Ahh so exciting that all of yor hard work is about to pay off big time! :) good luck at your marathon and enjoy every minute of the experience! You have invested so much time and energy into preparing and Saturday will be your day!

    I know exactly what you mean about the “just” 2 miles, it is so weird to taper down that much….makes your mind go a little crazy! I have been living proof of the crazy this week! But it is always worth it, and I am sure you are ready to go! Just be smart the first half, then leave it all out there :) Good Luck!!!
