Hi everyone! Anyone else watching the Boston Marathon coverage right now? It sure makes me want to go out for a run! I was so thrilled to see Meb win – I had the pleasure of meeting him last year at the Beach to Beacon race and I’ve been a huge fan ever since. Such a genuinely nice guy.
Anyway – Matt and I stuck around in town this weekend and it was so nice to not travel for once! On Saturday afternoon we took advantage of the weather by taking Bike Share down to Roosevelt Island and taking a nice stroll on the trails.
Lots of people were out and about kayaking – we’ll have to do that again soon, too!
Before that, on Saturday morning, I met up with my friends Sarah & Kathleen for yoga and brunch, which was lovely. We had brunch at Tryst in Adams Morgan and it was so nice out we sat in the sun. Feels so good after such a cold winter! I had the egg frittata and traded half of it for half of Kathleen’s egg sandwich.
As for yesterday, Matt and I got in a 12 mile training run (more on that tomorrow – a new distance record for him and he rocked it!) and then enjoyed brunch with my family for Easter.
Ham and baked beans is one of my favorite things – so good! Plus a delicious egg and spinach frittata-esque dish that my aunt made. Yum! I just had the leftover frittata for lunch atop salad greens with some chopped veggies and avocado. Hit the spot.
Matt and I contributed a springy salad to the Easter feast – mixed greens with sliced strawberries, walnuts, and goat cheese. Simple and tasty! Topped with balsamic vinaigrette.
For dessert, we had these fun frozen Limoncello and cream flutes my mom picked up from The Italian Store – refreshing and pretty, too!
