I’m Baaaack!

I’m back from Europe, friends! The past 2 weeks were amazing – filled with good friends, many adventures, lots of pastries and cheese and bread and rosé wine, miles of running and hiking and walking and biking, delicious dinners that lasted late into the evening, and a lot of relaxing, too. Taking a breather from technology while I was away was so nice – it was my first real break from work in over 5 years and boy, did I appreciate it. I haven’t felt so relaxed in I don’t even know how long!

I have approximately 4 million photos from my travels in France and Switzerland that I want to share with you guys, so stay tuned for that – I’ll intersperse Europe recaps with normal posts in the coming weeks.

I got back yesterday afternoon and was so happy to see Matt and my favorite little fluff again. Traveling was awesome, but I missed them! Matt was nice enough to make us a tasty dinner while I got settled. Isn’t it pretty? I requested “lots of veggies”. :)

He pan seared some chicken thighs, then added some water, beef broth, and marsala cooking wine into the plan with all the veggies. Simmered until it was ready! So good and simple, too. Plus some spices and salt/pepper I think as well. He didn’t follow a recipe exactly but was inspired by this one for Chicken and Spring Veggies from Cooking Light.

I’m jumping right back into work and am actually on a plane again (!) right now – I’m headed up to Maine for a cool blog trip with the Wild Blueberry Association. I’ll be back in DC on Saturday and am looking forward to relaxing and getting caught back up on life then! I was so tired with the time change last night that staying up until 9 p.m. was all I had in me. I woke up around 4:30 a.m. and tossed and turned until 5:30, when I decided to use the jetlag to my advantage and hit up a 6 a.m. Crossfit class. It was a tough one – no strength portion, all “metcon” – metabolic conditioning aka high intensity interval type training.

You had 5 minutes to complete each thing, and if you finished early you got to rest until the next 5 minutes started. I made it through the pull ups (with a band), wall balls (using an 8 pound ball), box jumps, and run, but the row and burpees got the best of me and I couldn’t complete them in 5 minutes. Something to work towards next time! :)

I was randomly hungry for real food vs. breakfast food when I got home so I ate the leftover chicken and veggies from last night, and made my Flour Free Breakfast Pancake to pack up and take with me on the plane. Plus berries! I thought this might just be my lunch, but I was starving by 11 a.m. so I already ate it all. Oh well! Important to listen to your body – sometimes you just need a double lunch. Guess I’ll be buying more food when I land in Maine!

I’m going to try to share some of my first Europe recaps tomorrow or Friday, but given that I’ll be in Maine and pretty jam packed with activities, that may or may not happen. Thank you for bearing with me as I get caught back up! Either way, I’ll be back on Monday with my regular weekday blogging schedule.

    5 years without a vacation is too long! I’m glad you were able to enjoy yourself.

    When I travel I love to learn about the history of the places I’m visiting. That’s what I’d like to read in your recaps too.

      I mean, I’ve taken vacations, but I’ve always blogged/been online a lot during them, so while still awesome they weren’t quite as restful. :)

    Is there a way to change the settings of your blog? I only read on my phone through Bloglovin but have not read your blog for months because it makes me click through and then go to the actual post which is just too much of a hassle on my phone. Just wondering. thanks :)

    I want to hear where you went in Switzerland, if you wished you had gone somewhere else, and how well you liked each city. I’ll be in Germany for Christmas and intend on taking a week to drive through Austria, Switzerland, and Liechtenstein (why not?) and need to know where to go in Switzerland.

    Can’t wait to hear about your trip! I saw that you went to Zurich; did you stop by Café Schober for some amazing pastries and hot chocolate? (Yep, hot chocolate is completely acceptable in the summer. Especially when it’s Swiss chocolate. ;-) )

    Can’t wait to hear about your trip!! We used your Italy recaps as a guide when we went to Florence and Cinque Terre last fall. My husband and I are planning a trip to France next year. Would love to learn best way to get around (train, car, air), restaurants, where to visit, and destinations for active people. Looking forward to your recap!

    I’m so excited to hear and learn about your trip because my husband and I plan to take a trip to Europe in a couple summers with France and Switzerland being two of our stops. Your first post on Paris is perfect! I am most curious to read and learn about sights, cities/neighborhoods, food/drink, and places to stay (but I assume you stayed with your friend for some part). Thanks for reporting on your trip! It sounds AMAZING! I’m glad you had a wonderful time.
