Oh my goodness… delicious lunch discovery today.
I present to you:
Black Bean, Feta & Quinoa Mess
(makes one serving)
- 1/2 C cooked Quinoa
- 1/2 C canned black beans, drained and rinsed
- Sprinkle of feta cheese
- Drizzle of balsamic vinaigrette
Throw it all in a bowl and ENJOY! Easiest and most delicious thing ever. I’m obsessed.
I used this fun red Quinoa. And I made a TON — I’m usually too lazy to make Quinoa (since it takes a whole 15 minutes to cook and everything… what?! I love my 90 second grains.), so when I do, I make lots! That way I can easily incorporate it into other dishes last minute :)
I also enjoyed a massive salad chock full of fresh veggies and canned beets, obviously. ;) Whenever the weather gets warm I seriously crave produce and light, fresh salads. Anyone else?
Mmmm. I had some juicy green grapes as well.
And then I set off for a walk! I worked from home today and it’s GORGEOUS outside, so you know I had to get out there.
And you know I had to bring my camera along for you guys :)
Look at all the beautiful spring trees :) Warm weather makes me so happy.
What’s your favorite season? I feel like I always think whatever season we’re currently in is my favorite :) So right now I really love spring!! :)
