Is anyone else obsessed with arugula as of late?
I’ve been making arugula salads all week — simple, peppery, and completely delicious. Be prepared to swoon.
Late Summer Arugula Salad
- Tomatoes, sliced (I splurged on heirloom — SO worth it!)
- Avocado, sliced (check out this post for my sneaky way to slice avocados)
- Cracked pepper & salt to taste (I used lots of pepper and only a tiny bit of salt)
- Equal parts:
- Lemon juice (fresh from a lemon or in the cute lemon containers)
- Hemp oil
Those four ingredients = my absolute favorite salad dressing EVER. Seriously. Hemp oil is very nutritious, too! It’s made from the seeds of the hemp plant and has a pleasant nutty flavor.
Oh and don’t worry, this salad will not get you high ;) Hemp seeds (unlike the bud and leaves of the cannabis plant) do not contain any psychoactive molecules
I recommend serving with a glass of homemade iced tea :)
Matt and I also enjoyed a Mediterranean tasting plate along with the arugula salad:
Mmmm… love me some tabouli, hummus, and pita. And baby carrots :)
Matt and I are spending the day trying to finally get our apartment all set up. We have photos to hang, furniture and knick knacks to organize, and more! Plus, I have lots of reading and schoolwork to do… and I want to try to squeeze in a little yoga action as well ;) I did a lot of running this week and I am feeling rather sore and tight today!
