Brrr — it’s a little chilly out there this morning! We had some big storms roll through yesterday and it really seems to have cooled things down. I’ll be rocking the fleece today on my way to work! Speaking of work — I hope you all aren’t sick of reading about packed lunch ideas yet. :)
Earlier this week, I made a simple tuna wrap for myself for work. Tuna + chopped celery + plain Greek yogurt + Dijon mustard = yum. I made it the night before so I just had to throw it on the wrap in the morning and top with some salad greens.
Plus a side salad, leftover from our big weekend salads:
And some grapes!
For an afternoon snack, I packed a Chobani pineapple:
And a handful of homemade granola:
Ready to rock! Don’t forget the silverware and napkin. :)
I actually didn’t end up eating the salad with my lunch that day (just wasn’t feeling it), so I repurposed it in yesterday’s packed lunch as a big salad mess — I love these. If you don’t like normal salads, try one of these! Great way to get in veggies without feeling like you’re eating a salad. :)
I added some black beans, 90 second brown rice, and salsa to the original salad. So easy and really delicious!
I enjoyed it with some grapes, and for an afternoon snack I had a KIND coconut almond bar and some dried mango. I’m making a similar salad mess for lunch today because I still have the ingredients on hand to use up!
