Dwindling resources in the pantry and fridge forced me to come up with something creative for lunch today!
Quinoa & Bean Stuffed Peppers
(makes one serving)
- 1 pepper with the top cut off & seeds cleaned out
- 1/2 C cooked quinoa
- 1/2 C kidney beans, drained & rinsed
- A couple shakes each of: cinnamon, tumeric, curry powder, chili powder, and cracked pepper
- Feta cheese
Mix together the quinoa, beans, and spices. Place into the pepper, top with a sprinkling of feta cheese, and enjoy!
If you want to heat the pepper + contents, I’m sure that would be delicious too. I was just too lazy ;)

Time to get back to studying! Another Anatomy & Physiology quiz this afternoon.. bah.

She has taken on an incredible challenge — on September 24th, she will be participating in the Susan G. Komen 3-Day for the Cure in Seattle. This will involve walking 60 miles over the course of three days and camping out at night. Wow!
Jessica has pledged to raise $2,300 for the cause — proceeds go towards breast cancer research and community programs. Her mom was recently diagnosed with breast cancer so this cause is obviously very important to her! Jess is one of the sweetest, most thoughtful people I know and she said she feels this is the least she can do for all the wonderful, inspiring women she’s met at the hospitals.
