This is a delicious and healthy twist on the classic chicken salad recipe!
Ingredients:
- Chicken, shredded or cut into small pieces
- 1 celery stalk, chopped
- 6-8 grapes, sliced
- Small handful walnuts, chopped
- Nonfat plain Greek or regular yogurt
- Dijon mustard
- Cracked pepper
- Fresh spinach
- Whole wheat pita/bread
Instructions:
Start with the chicken in a small bowl. Add chopped celery, grapes, and a small handful of walnuts.
Next, add some cracked pepper and a spoonful of plain yogurt and a squirt of dijon mustard. As usual, add about 2 parts yogurt per 1 part mustard, to taste. No mayo necessary!
Mix it all up, place on a whole wheat pita or bread , cover with spinach, and enjoy!! This would also be awesome with dried cranberries instead of grapes.






























Wow!!!! This is SOOO good!!! I just had it for lunch, but with a few variations. I didn’t have any grapes, so I used dried cranberries. I only had a tiny bit of celery left over from yesterday’s salad, so I also put in some cucumber. I wanted to use up some quinoa, so I put in half a cup with it instead of using a pita. I hate mayo, but love all these ingredients!

wow, this is a great! it looks and tastes amazing. had it for dinner, it felt like it was a ‘treat’ as the dressing is deliciously creamy….but all healthy, so no guilt…perfect. I added avocado and a little lemon juice. thanks for posting so many inspiring recipes. Great recipe – thanks. Made it yesterday and also added a few chopped green olives and some lightly roasted pumpkin seeds. But I loved the idea of walnuts and grapes – that works so well.
