This is delicious and just like a healthier deconstructed burrito :)

Ingredients:

  • Quinoa (cooked) (you can also use brown rice)
  • Black beans (drained and rinsed)
  • Green pepper, chopped
  • Avocado, sliced
  • Salsa
  • Fresh cilantro

Instructions:

Just toss everything in a bowl (I used one serving of the quinoa and black beans and then piled on the other ingredients!) and enjoy – it’s like a Mexican party in your mouth :)

      I tried this and loved it. I used brown rice, and added 1 marinated chicken breast. I also added some green tobasco sauce for a little kick. When I do it again I think that I am going to vary the salsa and use the Newman’s Pineapple Salsa. If you haven’t tried it yet you are missing out.
