This is delicious and just like a healthier deconstructed burrito
Ingredients:
- Quinoa (cooked) (you can also use brown rice)
- Black beans (drained and rinsed)
- Green pepper, chopped
- Avocado, sliced
- Salsa
- Fresh cilantro
Instructions:
Just toss everything in a bowl (I used one serving of the quinoa and black beans and then piled on the other ingredients!) and enjoy — it’s like a Mexican party in your mouth






























I tried this and loved it. I used brown rice, and added 1 marinated chicken breast. I also added some green tobasco sauce for a little kick. When I do it again I think that I am going to vary the salsa and use the Newman’s Pineapple Salsa. If you haven’t tried it yet you are missing out.
Ooo I’ll have to try the pineapple salsa, that sounds awesome! And you should give the quinoa a try – it’s delish
