Spinach & Avocado Cannellini Bean Hummus

If hummus and guacamole mated and had a love child… this would be it:

Mmmmmmm.

This would be such a fun appetizer for a party — it’s nice and creamy from the avocado and a great way to sneak in some extra veggies :)

Ingredients:

  • 1.5 C (one can) cannellini beans, rinsed and drained
  • 1 C fresh spinach
  • 1 Tbsp. olive oil
  • Half a large ripe avocado
  • Juice from 1 lemon
  • 2 cloves garlic
  • Salt & pepper to taste

Instructions:

Toss it all in a food processor and whirl away! Enjoy as a dip with crackers or veggies, or as a spread on sandwiches (like with smoked salmon as shown here!):

    Made this the other day for a pitch-in at work.. everyone LOVED it! so easy to make and it has the awesome combination of hummus texture but with a guacamole taste! will definitely be making it again. thanks Anne!

    Just picked up my beans and avocado from the local German grocery store so I could make this tomorrow! I am going to serve it with some toasted tortillas and Quinoa tacos!! Cannot wait, it looks so yummy!!!
