If hummus and guacamole mated and had a love child… this would be it:
Mmmmmmm.
This would be such a fun appetizer for a party – it’s nice and creamy from the avocado and a great way to sneak in some extra veggies
Ingredients:
- 1.5 C (one can) cannellini beans, rinsed and drained
- 1 C fresh spinach
- 1 Tbsp. olive oil
- Half a large ripe avocado
- Juice from 1 lemon
- 2 cloves garlic
- Salt & pepper to taste
Instructions:
Toss it all in a food processor and whirl away! Enjoy as a dip with crackers or veggies, or as a spread on sandwiches (like with smoked salmon as shown here!):

Just picked up my beans and avocado from the local German grocery store so I could make this tomorrow! I am going to serve it with some toasted tortillas and Quinoa tacos!! Cannot wait, it looks so yummy!!!
