A New Five Minute Packable Lunch

Hello friends!

I’m rushing off to class (my second to last Microbiology class!!), but just had to share another wonderful 5-minute packable lunch creation. (You can find the rest of my 5 minute packable lunches on my recipe page).

The star of today’s packed lunch? Two of my Scrambled Egg Muffins!

Along with the muffins, I packed a colorful salad, featuring mixed greens, spinach, cucumber, carrots, and beets:

And because lunch is always better when it ends with something sweet (and juicy):

These beautiful organic cherries that I splurged on the other day! The plan is to eat half with lunch, and the rest as an afternoon snack.

My other afternoon snack? Roasted almonds. Simple and delish.

Since I’m heading to school instead of work and won’t have a fridge handy — everything got packed into my awesomely nerdy lunch box with an ice pack. Heh.

    Love these posts! Goes to show that anyone (no matter how busy) can pack a healthy lunch every day. I have soooooooo many bento boxes, ice packs, and lunch bags, it's taking over my kitchen, haha.

    Lunch boxes are the *best*!! School food seems always to be a) unhealthy, b) unyummy, or c) SO expensive... and it's always great to peep what others are up to...

    Lunchboxes are the best! I have a pretty blue and pink one that I pack every morning during the school year, I love it! P.s. Those cherries look so refreshing, I want them in my lunchbox.

    Haha I always get crap for carrying my lunchbox to work. Most people order food out and they think it is weird I bring my lunch for some reason. I would rather pack something healthy and save money!

    Muffins that double as breakfast and lunch! Looks good! And I use ice packs too to keep my food ok while I'm at the gym before I get to work.

    Love this lunch with egg muffins. Your egg muffin idea rubbed off yesterday and I did a fritatta for dinner last night and had leftovers+salad and cherries for lunch today. So glad cherries are in season :)

    My old roommate had this really cute lunch bag that says "Love, Laugh, Eat, Repeat". I loved it! And was super excited when she moved out and left it behind because she didn't want it!
