Butternut Squash, Prosciutto, and Goat Cheese Strata

loaf (1 pound) crusty whole grain bread, cubed
cups cubed butternut squash
medium yellow onion, chopped
teaspoons chopped fresh thyme
oz sliced prosciutto, roughly chopped (optional)
oz goat cheese, crumbled
salt and pepper, to taste
Heat oven to 425 degrees.
Place butternut squash, onion, and thyme on a baking sheet. Toss with a drizzle of olive oil and a pinch of salt and pepper. Spread into a single layer and roast for 15-20 minutes, until squash is tender.
Place the bread cubes in a large baking dish. Add prosciutto, roasted squash and onions, and crumbled goat cheese. Toss lightly to distribute.
Combine milk, eggs, and a pinch of salt and pepper in a bowl and whisk to combine.
Pour egg mixture over bread. At this point you can cover the dish and refrigerate overnight to bake the next morning, or you can bake immediately.
Reduce oven to 350 degrees. Bake strata for about 40 minutes, until top is browned and crisp and the center is set.
