Easy Breakfast Ideas

Good morning! I’ve been trying to mix up/vary my morning breakfasts lately – giving Riese some of what I eat and wanting to give her a variety of food has made me realize how often I eat the same things! Microwave banana oatmeal, protein pancake, avocado toast with fried eggs, rinse and repeat. (For more details on our progress so far with feeding Riese solids, check out this post: our experience with baby led weaning.) I know this breakfast isn’t THAT different, but it felt a little different at least! I had a sprouted grain wrap with cottage cheese, almond butter, and berries, which I rolled up after this photo. The chew from the tortilla was yummy and it was nice to mix it up from toast – I’ll have to do this more often! (Riese got some cottage cheese and a finger-sized piece of the tortilla with some almond butter on it to gnaw on.)

Second breakfast, mid-morning while in the middle of work, was a hard boiled egg, cheese, cherries, and an oatmeal banana coconut cookie with almond butter on it.

As for lunch yesterday, I had an easy salad: greens + cherry tomatoes + feta + quinoa + smoked salmon with a dijon lemon juice vinaigrette (olive oil + lemon juice + dijon mustard + apple cider vinegar). I really love packaged cooked smoked salmon like this – makes for such an easy protein option that doesn’t require using the stove.

I will leave you guys with a picture from this morning – I was in Georgetown early in the morning with the girls for our weekly workout class date, and I didn’t get a photo of the workout but I did snag one of the pretty canal on the walk back to the car. This is one of my favorite areas of DC – so quaint! I always thought it would be fun to live right on the canal in one of these cute colorful rowhouses.

    current faves: - yogurt/fruit/granola bowl - toaster waffle with pb, banana & honey - avocado toast - try it with a drizzle of tahini! - runny eggs never get old after pregnancy :)

      Love tahini with avocado! Alexis of Hummusapien combines avocado, strawberry, tahini, and maple. I love it!

    I love these ideas! I am so much more go-with-the-flow than years past, but we also have a loose routine. Oatmeal creation on Monday, savory oatmeal on Tuesday (classic combo is spiced oats with wilted spinach, melted sharp cheddar, and over easy egg), waffle Wednesday (one sweet/one savory some weeks), and then I have fun with Thursday and Friday. Sometimes avocado toast or other toast creations, and today we enjoyed the last of our risotto with wilted spinach, melted gouda, and farm fresh eggs.

    During the week it is the same for me - yogurt with sunflower seeds (thanks to you I add that in now) and some cereal plus fruit for a little snack mid morning - as it is easily eatable at my desk. Unfortunately, I have no time in the morning to eat beforehand as I walk my dog, hit the gym, shower and then commute. Do you have a good recommendation for packaged cooked salmon? The ones I found were so high in sodium I never looked again. Would love to be able to add this to my summer lunch/dinner routine since cooking fish in my apartment is just awful. What a quaint area, love that pic!

      This packaged cooked smoked salmon was from Aldi - I didn't look at the sodium but I'm guessing it was probably high because smoked salmon usually is. If you're looking for a lower sodium option you could go for one of the cooked (but not smoked) salmon options in a pouch or can - those aren't as high!

    I get stuck in breakfast ruts too! My favs are smoothies, hummus or refried beans and tomato on toast, and oatmeal.

    This is something I got from you LOL, but do you remember you once shared this toast idea where you top it with nut butter and then a sliced banana and greek yogurt? I like to sprinkle chia on top. So easy and filling. Just sharing in case you forgot about it ;)

    I love shopping at Aldi...I'll have to try that cooked smoked salmon sometime! I'm not sure exactly what that is exactly haha. Does the taste/texture seem more like regular cooked salmon? Or smoked?

      It's smoked salmon but not slimy like regular smoked salmon - it's more of a hybrid! Texture is more like really well done salmon - flaky.

    I’ve loved your flourless pancake for several years now, but just tried the banana oatmeal this morning. Yummie! It made a big bowl, and I thought I probably couldn’t eat it all, but then goggled up every bite! Thank you!

      It's from Aldi - their "Knock Your Sprouts Off" wraps. Yummy and don't fall apart!

    I hear you! I have been in such a breakfast rut lately--and that means our daughter gets in one, too (she's two) because we end up rotating the same 3 or 4 breakfasts. I'll have to try this roll-up if I find a good GF wrap (most just crumble apart). I've always loved a good yogurt parfait for breakfast because you have the basic parts and then mix up what they are (plain yogurt + fruit + omega 3 + nut). Since it's been warmer here in Massachusetts, I've backed off of warm oatmeal and instead done overnight oats or smoothies for when it gets hot (and bonus--the daughter LOVES smoothies, which is great for getting some veggies in her). The Fitnessista's breakfast cookie dough is always a regular. I love it so much and never get sick of it.
