Mexican Black Bean Spinach Burgers

Way more delicious than veggie burgers from the frozen foods section of your grocery store. And just about as easy, too!


Mexican Black Bean Spinach Burgers (vegan)

(makes 2 patties)


  • 3/4 C black beans (rinsed and drained)
  • 1/2 C fresh spinach
  • 1/4 C whole wheat flour
  • 2 Tbsp. oats
  • 1 Tbsp. lemon juice
  • 2 tsp. olive oil
  • 1/2 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/4 tsp. salt
  • 1 small garlic clove


Toss it all into a food processor and whirl away! Once it’s mixed, form into two patties. Toss them onto a skillet (or a grill) coated with cooking oil/spray and cook on medium high for about 5 minutes, flipping at least once until they have a bit of a crust on them. Serve atop salad or on a whole wheat bun with toppings!

    Sounds great…but for those who dont want to add extra carbs…I would eliminate the wheat and oats. It will still bind. Cheers!

    FINALLY! Finally a black bean patty that doesn’t stick, fall apart or taste like cardboard…..and no eggy mess to contend with. PERFECT consistency. I had the bare minimum in my refrigerator tonight, no spinach, so I threw in red and green pepper and a little onion. (I can’t wait to add in spinach next time). No bun but ate with fresh avocado dressing….delicious. THANK YOU so much, I can’t wait to try your other recipes. ( I never comment on recipes I fine on the internet, but this one is so worth it. ) And so easy to make after a long day at work.

    I tried this recipe this morning so I could have lunch for work and was so happy with the result! The burger tasted great and was so quick to make!
