Shrimp, Cucumber, and Feta Orzo Salad

This delicious and flavorful Shrimp, Cucumber & Feta Orzo Salad is perfect for summer!

I was served this salad while staying at the Tabor House Inn in Vermont. It was so good I asked the inn’s owner, Jennifer Bright, for the recipe! This recipe is adapted from one by Ina Garten.

Shrimp, Cucumber & Feta Orzo Salad


  • 2 lbs shrimp, peeled and deveined
  • 3/4 lb orzo
  • 1/2 cup fresh lemon juice
  • 1/2 cup olive oil
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 cucumber, chopped
  • 1 cup chopped fresh dill
  • 1 cup fresh parsley, chopped
  • 3/4 lb diced feta cheese


1) Cook orzo as directed on package.

2) Roast shrimp on a sheet pan (spread on pan, drizzle with oil and sprinkle with salt and pepper) at 400 for about 5 minutes; allow to cool.

3) Whisk together lemon, olive oil, salt, and pepper; mix in with warm orzo. Add roasted shrimp, cucumber, dill, parsley, and feta; serve at room temperature.

    This looks delicious but the recipe says 3/4 lb of orzo. That seem like a lot. How many cups would that be? I’m looking to make this for a group of 5-6 people.

      I think this recipe would work well for a group of 5 to 6! Let me know, though – when I posted this recipe (back in 2009, I think?!) I didn’t always remember to note total yield with my recipes, and I haven’t made it recently – sorry about that! In terms of 3/4 lb of orzo, that’s just 3/4 of a standard sized package (it usually comes in a 1 lb. box). A whole box of orzo (so the entire 1 lb dry) will, when cooked, serve about 8. So if you want some leftovers you can go ahead and use the whole package, and just add a little extra shrimp, too. I hope this helps!
