Spiced Cranberry Compote Oatmeal

This is a delicious but healthy breakfast — the salty cottage cheese, chewy oatmeal, and tart but sweet cranberries made an awesome combo. Give it a try yourself!


Spiced Cranberry Compote Oatmeal

Oatmeal (base):

  • 1/2 C raw oats
  • 1/3 C skim milk (or soy)
  • Few shakes cinnamon

Second layer:

  • 1/3 C lowfat cottage cheese

Cranberry Compote (topping):

  • 1/2 C fresh cranberries
  • 1 Tbsp. lemon juice
  • 1 tsp. maple syrup
  • 1 tsp. vanilla extract
  • Few shakes cinnamon
  • Few shakes nutmeg

Combine oatmeal ingredients in a bowl, microwave on high for 3 minutes, stirring once. Set aside.

In a small pan or skillet, mix all cranberry compote ingredients. Turn heat to medium and stir frequently, until desired consistency reached (a few minutes).

In your original oatmeal bowl, layer cottage cheese over the cooked oatmeal, followed by the cranberry compote topping. Add a sprinkle of brown sugar, if desired. Enjoy!
