Super Charge Me! Cookies

Well, I finally did it.

I finally made “Super Charge Me! Cookies”!

Jenna used to feed these cookies to me last summer in Tampa, and I’ve been dreaming about them ever since.

But I never had spelt flour on hand! Spelt flour made me kind of nervous. I didn’t know what it was and it sounded super healthy and scary.

That is… until one of the farmers on the Stonyfield Blogger Barnstorming Tour gave us some! 🙂

And then I saw that spelt flour is not scary at all — it’s just like normal flour but more nutritious and delicious! (For more info on spelt — check out this post!)

The “Super Charge Me! Cookies” recipe comes from one of my very favorite cookbooks: Eat, Drink, and Be Vegan.

I get asked a lot about my favorite cookbooks, but to be honest, I usually prefer to create my own recipes! The exceptions? I own three cookbooks:

  • Eat Drink & Be Vegan
  • Veganomicon (essentially the vegan bible)
  • Clean Food

All three cookbooks rock my world. Clearly I’m far from vegan, so don’t be scared off by the first two since they’re vegan. It’s fun to try something different! All the recipes in these books are majorly delicious, really creative, AND very healthy — not to mention super simple. Awesome! If you don’t own these cookbooks, please go buy them. You will not regret it. And no, no one is paying me to write about these cookbooks. I’m just obsessed with them.

Why did I make these? Today is Matt’s birthday! (Remember him? I don’t blog about him much apparently!) It’s a gorgeous day and we are off on a secret adventure in a few minutes. I told him to “wear hiking clothes and your ankle braces” (he has ankle issues from years of soccer). I think he’s scared to see what I have up my sleeve 😉 Hehe

    I have Veganomicon, but have not made anything from it yet... many of my vegan recipes I make up, from old recipes I made when I wasn't vegan... I love veganizing! I really want Eat Drink & Be Vegan, though... it looks good, and if there are recipes like this in it I know I'd use it ! :) these look fabulous !

    Those look fantastic! I've been meaning to try spelt flour for some time. I need to get on it! Clean Food is one of my fave cookbooks as well. Mmmm.

    ED&BV is definitely my favorite cookbook. And, the supercharge me cookies are amazing. One time I saved a little extra dough and used it as an oatmeal topping - AH-MAZ-ZING!!

    I make these all of the time ... probably a little too frequently if you know what I'm saying. Definitely made them w/ wheat flour and that works too.

    It's so fun to experiment with vegan food. I feel like I can get kind of wild and indulgent because vegan cooking is so focused on clean, plant-based ingredients! I'm not willing to give up my seafood and my Parmesan cheese, but dabbling works great for me.

    I've heard way too many things about these cookies to not have had them yet!! They look amazing. Spelt flour is my favorite flour these days. I love it!

    I've made these cookies numerous times and they are always a hit. Plus you can get creative and add or subtract different additives like coconut to change the flavor. So much fun!
