Good morning from the road — Matt and I are on our way to the Outer Banks in NC from DC!
Matt has been enjoying listening to his audiobook (and was nice enough to drive), and I’ve been busy catching up on emails and blog work on my laptop thanks to my Droid’s mobile hotspot. Starting our vacation with an empty inbox and a bunch of blog updates complete that I’ve been trying to get done for months? Priceless.
On that note, I finally updated my recipe page with links to my most recent recipe posts! Here they are:
—
Easy Mexican Lasagna (leave out the chicken to make it vegetarian, use corn tortillas for gluten free):
High Protein Oatmeal (I’m working on a microwave version of this!):
Easy Mexican Barley Salad (vegan):
I also included a link to my 10 Healthy (and Easy!) On the Go Snack Recipes post from a couple months ago.
Yum!
I also got my Press page all updated, my Health Tips & Motivation page updated, and my Running Race Recaps page updated. Woohoo!
Speaking of running and race recaps, all four Reach the Beach Relay video episodes that the videographer that came along with us during the race made are now up! Check them out if you are interested in seeing more about our experience running an overnight relay race. What a blast — I want to go back! I’m so happy we have these videos to look back at and reminisce — and it was fun seeing video of what the other van was up to while we were out running, too!
Episode 1: Campfire
Episode 2: Youthful Enthusiasm
Episode 3: Through Darkness
Episode 4 — The Finish!
And in case you missed my original race recaps from the relay, here they are. Thanks again one more time to New Balance for the amazing experience. 🙂

- RTB Relay Leg 2: The Banana Diaries
- RTB Relay Leg 3: Reaching the Beach!
Even though the race was almost a month ago now, I still might share a “tips for running an overnight relay race” post if anyone is interested — thoughts? I have it mostly written and just need to finish it up!
Time to relax for the last bit of the drive to OBX. Fingers crossed we don’t hit too much beach traffic — we left DC super early this morning in hopes we would avoid most of it.
Have a great weekend, friends!
