Step 1

Dice vegetables, watermelon (incl. rind) & herbs.

Step 2

Finely chop watermelon rind, red onion, jalapeño & garlic in a blender or food processor.

Step 3

Add watermelon, tomato, basil, red wine vinegar, olive oil, salt & pepper.

Step 4

Blend until mostly smooth (or puree completely if desired).

Step 5

Pour into bowls and garnish with avocado, olive oil, fresh basil, etc.
