Bring quinoa, coconut milk, water & salt to a boil in a pot. Cover & reduce to simmer until liquid is absorbed.

Step 2

Stir together soy sauce, honey, ginger, sesame oil, lime juice, and green onions.

Step 3

Toss raw shrimp and pineapple chunks in ginger soy marinade.

Step 4

Thread onto skewers. Grill over medium-high heat until shrimp is pink throughout.
