Grilled Chimichurri Shrimp Skewers

Ingredients You'll Need:

Step 1

Finely chop shallot, garlic & jalapeno in a food processor.

Step 2

Add cilantro, parsley, lime juice, olive oil, salt & pepper. Process until smooth.

Step 3

Toss raw shrimp with 1/3 of the chimichurri sauce. Thread onto skewers.

Step 4

Cook on grill over medium-high heat until charred & pink throughout.

Step 5

Serve with remaining chimichurri sauce, grilled vegetables & brown rice (or your favorite sides!).
