Kale Salad Ingredients

Step 1

Combine & blend silken tofu, olive oil, lemon juice & zest, garlic, capers, nutritional yeast, dijon mustard, salt & pepper.

Step 2

Mix chickpeas, dijon mustard, garlic, nutritional yeast, and olive oil in a bowl. Roast on a sheet pan at 350 F until crispy.

Step 3

De-stem and thinly-slice kale. Combine with dressing in a bowl and toss, massaging lightly.

Step 4

Top with chickpea croutons & toasted pepitas. Enjoy!
