Sriracha Tofu Stir Fry

Ingredients

FOR THE STIR FRY: • Tofu • Veggies: carrots, bell pepper, edamame, snap peas • Brown rice or brown rice noodles FOR THE SAUCE: • Sriracha • Low-sodium soy sauce • Rice vinegar • Honey • Fresh garlic • Fresh ginger

Step 1

Par-cook carrots in microwave with a splash of water (or roast in oven).

Step 2

Cook brown rice or brown rice noodles according to package directions.

Step 3

Cube tofu. Pan-fry over medium-high to high heat on each side until lightly crispy. Remove & set aside.

Step 4

Cook veggies in the skillet until softened. Add tofu again. Mix sauce ingredients in a bowl and toss to coat.

Step 5

Sprinkle with sesame seeds and serve hot alongside brown rice or brown rice noodles.
