We’re Back from Italy!

Hello my friends – I missed you! Matt and I got back from Italy last night. I can’t believe how quickly our trip went by!

I’m bummed our Italian adventure is over, but it’s really nice to be home, too. 🙂 I made myself my favorite breakfast this morning – my Flour Free High Protein Breakfast Pancake. After 10 days of bread, pasta, cheese, wine, and cured meats, it will be great to get back to healthy eating again!

I have a mountain of emails to go through so I’d better get to it. Stay tuned – I’ll be back to share all sorts of Italy adventure recap posts! I took approximately a million photos and I can’t wait to share them. 🙂

    Welcome back! I love lentil soup for an easy, tasty and filling meal. I like to make a huge pot of it and eat it for lunch at work :) My favorite lentil soup recipe was inspired by Smitten Kitchen: http://eatprayrundc.com/2013/02/20/lentil-soup-wsausage-via-smitten-kitchen/

    I love kicking my day after vacation off with salads and fresh fruit. Especially in the summer time. Makes me feel so much cleaner immediately.

    I was inspired by the Sweetgreen May salad and made a spinach salad with strawberries, goat cheese, mint, walnuts, and cranberries with some olive oil and balsamic vinegar (with salt and pepper).

    I had a really yummy kale salad with sundried tomatoes, onions, chick peas, sunflower seeds and a lemon/evoo dressing. It was perfect!

    I always want a big salad with a rainbow of veggies after a vacation. One of my current favorites is mixed greens topped with mango/black bean salsa. The mango adds the right amount of sweetness while still being healthy.

    Ah I hear ya!! Sometimes going out for dinner every night is overwhelming! I wouldn't call this recipe very " I cant wait for healthy food" because it has a lot of carbs and calories in it my favorite go to meal for week day cooking is Pesto and Whole Wheat Pasta... This week I am thinking about adding some veggies it it.... Grape Tomatoes taste really good and I am thinking about adding some Zucchini as well. Topped with Feta cheese. Yum.

    Like most other people, I love getting back to healthier eating with salads. I can eat a huge salad filled with yummy veggies, beans, grains, fruits, nuts, seeds, etc. and feel satisfied.

    I love your pink dress it is too cute! I love eating a big salad with a nutritional yeast dressing and heaps of veggies. As well as greek yoghurt with mix ins. Both of those make me feel instantly healthier!

    Looking forward to more pictures of Italy! When the heat of summer hits, I gravitate towards cold foods. Gazpacho is my summer favorite, I make it on the weekend and typically puree it all (less chopping) then as we eat during the week, for the garnish I'll chop a little cucumber & green pepper, maybe a dash of sherry, (for my husband I'll add a parmesan crouton). To me there's nothing more refreshing than a bowl of gazpacho, it's filling and nutritious. It pairs well with chicken, fish, all meats and of course a glass of wine. What I'm in need of is a dreamy lemony dessert that's creamy (think Bavarian cream minus the eggs) & not full of calories & fat. I'm still looking...

    Being of Italian descent, I would absolutely love to go to Italy. My husband says he will take me one day. He better hurry up, we are both in our 60's. Ha. So glad you enjoyed yourselves. I know you have said in the past your brother is stationed in Italy, were you able to see him? Welcome back. We missed you too. P.S. Love that pancake

    How about some tofu marinated with one of your tofu marinades and some grilled veggies? I am a regular reader of yours, and over the weekend I was googling tofu marinade ideas and your site came up on the search results. Duh, I should have just came here first. :)
