Step 1

Chop vegetables into bite-size pieces.

Step 2

Saute butter, onion, leek, mushrooms & garlic in an Instant Pot ('saute' function) until tender.

Step 3

Add thyme, farro & white wine.

Step 4

Cook, stirring, until wine is absorbed. Add vegetable broth. Cover & cook on 'high' for 10 mins.

Step 5

Release steam. Turn on 'saute' setting. Add mushrooms & asparagus. Cook 2-3 mins.
