Beetroot Hummus Ingredients

Step 1

Roast beets wrapped in foil with olive oil, salt & pepper. (Or use canned beets for quicker prep).

Step 2

Place sliced beets, chickpeas, tahini, lemon juice & garlic in a food processor.

Step 3

Process until smooth. Steam in olive oil with the food processor still running.

Step 4

Spoon into a bowl and top with more olive oil, salt, pepper, and chopped parsley.

Step 5

Serve with crunchy vegetables and crackers or pita bread.
