Slow Cooker Chicken Cacciatore

Step 1

Combine canned tomatoes, tomato paste, chicken broth, rosemary, garlic & seasonings in a slow cooker. Stir.

Step 2

Add diced bell pepper, chopped onion, sliced mushrooms & chicken thighs.

Toss to coat. Cook on high 3-4 hours or low 7-8 hours, until chicken is cooked through.

Step 4

Shred chicken & stir into sauce OR remove chicken & thicken sauce on the stovetop.
