Step 1

Thinly slice watermelon rind into spears, removing the green skin.

Step 2

Combine apple cider vinegar, water, sugar, salt & spices in a pot. Bring to a boil, stirring to dissolve the salt & sugar.

Step 3

Pack sliced watermelon rind & jalapeños (if using) in jars, leaving 1/2 inch of space at the top.

Step 4

Pour hot pickling liquid on top, covering completely. Seal jars & store in fridge up to 3 months.
