Step 1

Cook rice according to package directions.

Step 2

Slice tops off bell peppers. Remove seeds & membranes. Place on a metal or silicone rack in Instant Pot.

Step 3

Combine all other ingredients (except cheese & green onions) in a bowl. Fill bell peppers with mixture.

Step 4

Pour water to cover bottom of Instant Pot. Cook on high ('poultry setting' for 12 mins. Release steam.

Step 5

Top bell peppers with cheese. Replace Instant Pot lid & let residual heat melt cheese. Top with green onions & serve.
