Step 1

On 'saute' mode, brown beef chunks in Instant Pot with olive oil for 2 mins on both sides.

Step 2

Remove beef & set aside. Repeat with remaining beef. Saute onion, vegetables, garlic & thyme until soft.

Step 3

Add tomato paste & worcestershire sauce. Toss with vegetables to coat.

Step 4

Add beef back into the pot, plus bay leaves, barley & beef broth. Seal & cook on high 20 mins.

Step 5

Let sit 15 mins, then turn valve to vent. Remove bay leaves & spoon into bowls.
