Instant Pot Pork Roast

Ingredients

Step 1

Combine brown sugar, salt, pepper & cayenne. Rub over pork shoulder to coat.

Step 2

Lightly sear pork on "saute" function in Instant Pot. Remove to a plate.

Step 3

Add onion, garlic, rosemary & thyme to Instant Pot. Saute until fragrant.

Step 4

Add tomato paste, balsamic vinegar & chicken broth. Place seared pork on top (trivet optional).

Step 5

Place lid on Instant Pot. Set valve to 'seal'. Cook on 'meat/stew' setting for 70 mins, or until tender.

Step 6

To make gravy, skim grease from the drippings. Mix cornstarch & water, then pour into drippings & cook until thickened.
