Coconut Mango Chia Pudding

Ingredients

Step 1

Dice mango. (Tip: use the back of a glass cup to separate the skin!)

Step 2

Blend mango, coconut milk, honey & vanilla extract until smooth. Pour into a jar or bowl. Add chia seeds.

Step 3

Stir well. Let sit 5 mins, then stir again. Cover & refrigerate at least 2 hours (up to 5 days).

Step 4

Add desired toppings (like more mango, strawberries & flaked coconut).
