Feta & Chicken Stuffed Peppers

Ingredients

• Bell peppers • Onion • Garlic • Shredded chicken (pre-cooked) • Chickpeas • Quinoa • Fire-roasted diced tomatoes (canned) • Feta cheese • Oregano • Kalamata olives • Parsley

Step 1

Cook quinoa according to package directions.

Step 2

Slice tops off bell peppers. Remove seeds & membranes.

Step 3

Cook onion & garlic in a skillet over medium-high heat. Stir in cooked chicken, quinoa & chickpeas.

Step 4

Stir in canned tomatoes, oregano, olives & parsley.

Step 5

Stuff bell pepper halves with filling. Bake, covered, for 40 mins.

Step 6

Sprinkle with feta & garnish with more parsley.
