Crockpot Chicken Enchiladas Verde

Step 1

Place chicken breasts and seasoning in slow cooker. Toss to coat.

Step 2

Add diced bell pepper, chopped onion, black beans & most of the enchilada sauce. Stir.

Cook on low 6-7 hrs or high 3-4 hrs. Shred chicken, add spinach & stir well.

Step 4

Assemble enchiladas with shredded cheese & chicken filling on tortillas. Roll & place in baking dish.

Step 5

Stir remaining green enchilada sauce with crockpot sauce. Pour over enchiladas & top with cheese.

Step 6

Broil 3-5 minutes, until cheese is melted & bubbly.
